TERM 2
Week 1
For the start of this week students reviewed Hygiene procedures and were given an introduction to Preparing and Serving Espresso Coffee. Although students will be taken through the theory and practical tasks in May by a trainer and assessor from Brisbane, it is essential that learners are familiar with the elements of this unit. Therefore, over the coming weeks students will be given the opportunity to identify the parts of the espresso machine, all utensils and equipment relevant to this unit and the hygiene procedures applicable to preparing and serving non-alcoholic beverages. On occasion students will also be given the opportunity to prepare tea, coffee and other hot beverages to staff throughout the term.

Week 2
Students started to identify the parts of the espresso coffee machine this week and actually started to make their own cappuccinos. Only a couple of students have actually had the pleasure of using an espresso machine before so for the majority of individuals it was a completely new experience.
All students were given their Coffee Research assignment, this assignment has a two week turn around, with a draft due at the end of week 3. Grade 11's will have a closed book exam on Hygiene next Tuesday and have been strongly advised to revise class notes and access My Classes to review the unit.
Grade 12's will start their research next week to locate suitable recipes for their cafe including gluten free recipes.

Week 3
Students continued to work through their research
assessment. A fairly quite week with the grade 11's away, next week we
will concentrate on the parts of the machine with a verbal assessment
next week. Students will also be given the opportunity to make more
coffees and familiarise themselves with the espresso machine in general.
Week 4
Most of the students have handed in their Research
assignments. Please note for students who have not completed this task
that your Prepare and Serve Espresso Coffee day is next Monday, the
research assessment was to help you with the knowledge you will need to
complete your certificate.
All
students are reminded that they are to come to school in their full
chefs attire: Ironed uniform, neck-chief, apron, hat and clean closed in
leather shoes.
Monday: Prepare and Serve Espresso Coffee
Tuesday: Mock tails and Responsible Service of Alcohol (RSA)

Week 5
Our trainer and assessor arrived from Brisbane this week and trained students in the art of Coffee making on the Monday and Mock Tails and their RSA on Tuesday. Both days were successful and enabled the learners to participate in a very practical environment. I have included some photographs and videos in the student link on the right side of the blog.
Students were given their practical assessment for Tuesday and their end of term. Tuesday will involve students preparing an espresso, latte, cappuccino. flat white and a macchiato, in the end of term assessment learners will run their own coffee shop. Every student will need to identify, prepare and serve a range of hot beverages and 1 recipe each. A portfolio of work will enable the students to submit a wide range of information including their recipe and work-plan, evaluations, images and videos, the costing of their recipe and copies of the menu and invitation used.
High emphasis will be on the following areas:
